Here are a few tips.

Tip: Watch the type and direction of lighting when you select a replacement background. The eye is very sensitive to these cues and will quickly spot a replacement if the match is too far off.

Tip: When you go out shooting, take extra shots of skys and interesting textures that you may encounter. You can build up your own library quickly. Be sure to shoot the sky from different directions to increase your ability to match your shots.

Tip: Feather your selection when making the replacement. Sharp demarcations stand out. And, adjust the color of the replacement sky to match your scene. Levels or curves works well for this.

In PRE7, Videomerge works very well for replacing sky scenes. But for video, I like using a video shot of the sky that will have the same noise as the rest of the shot.

Bob & Robert have some good points. I shoot skies by the hundreds, as well as grass and beds of flowers. These all work well for cloning in over bare spots and in flowerbeds that need filling, or even creating.

Adjusting both the contrast and also the noise is a great tip, for making it appear the same, as does a Hue/Brightness/Saturation Adjustment Layer.

For noise, I like to dupe the Layer, apply (usually HBS, but sometimes Gaussian) noise and then adjust the Opacity of the dupe Layer down. I find this a lot easier than trying to hit just the exact amount to add.

Obviously, it's a bit easier with stills, but similar can often work in video.
