Anyone know a good program to convert a DVD video to uncompressed quicktime?

Try "Super" Bruce (FREE). Will convert anything you throw at it.

are you on a mac or pc?

I'm relatively new to this but I've been using MPEG-Streamclip (for win or PC), but on a Mac you also need to get a MPG2-Playback plug in for $20 QT to do a few things .

Also can use HandBrake, I believe (freeware) - recommended to me from a couple of sources:
