It is a few years since I last converted analogue (VHS tapes) to video
and that particular use was the only experience that I had.
I used an old miniDV tape based camera that I owned, using the camera's 'digital out' connected by firewire to a card in my PC. For the input side I used one of these - SCART from VHS machine to composite input to camera:-

It was quite a nice earner for a while, converting VHS wedding videos to DVD.
There are a lot of folk on here that have previously needed analogue to digital and maybe they will chime in soon. Sorry that I wasn't more helpful.
