Very tricky, George.

I have 10 already installed, but Microsoft came out with a newer version of 10 which didn't turn out well after it was installed. So, I rolled back to the previous version of 10 using Microsoft's rollback option. When I wasn't looking, the newer version of 10 was installed again. Fortunately the second time was a good install.

Make sure to do a full backup frequently, just in case.

Currently I have my machine set up so that I have to manually check for windows updates. I then select every update except Win 10.

To cancel the upgrade and stay on your existing version of Windows, you want to push the somewhat less obvious “Click here to change upgrade schedule or cancel scheduled upgrade" (It's right below the date, in the above screenshot).
