From experience (in Italy) I can tell you that the nearest thing to bacon is pancetta and, trust me, in the absence of anything else it is acceptable but it is a poor substitute for the real thing! img0277

John, touché...
I don't agree... bacon is smoked pancetta, but we call "pancetta" the smoked pancetta as well.

Like in Britain, as I imagine, pancetta (the raw, let's say so :-) ) is different depending on the region, some Italian pancettas are ... well, just try and tell me please :-)

Francesco, the next time I have visitors here from the UK I will ask them to bring some bacon.

We will need to work out how to get it to you but I am confident that, when you cook it and then taste it, you will agree that it isn't quite the same as pancetta affumicata. :hyst:
