There is an upside down banana coconut recipe popping up on social media lately. That version used a plain cake mix. My version is from scratch and the cake is a cross between banana bread/cake/gooey cake. Should serve 9, but so sweet I would say 15! Next time I will cut out some of the sugar, maybe 1/2? I posted this on FB and getting requests from family. My daughter hates coconut so I will make hers banana only.

Looks great but I have to say that I agree with your daughter. Coconut ruins a good cake.

Mom if invited to the table I am eating the pie coconut and all. :)

But if I had the slice as a 9 piece pie you might have an extra visitor sleeping in a chair until the sugar buzz goes away.......

The official taste tester said yes to the cake :-D Served warm it is too sweet, but cold is better. A side of coconut or oatmeal ice cream would be good with the cake. It is very dense so not sure if it should be labeled a cake.

Toasted coconut is great on Greek yogurt or ice cream. Love coconut baked fish. I have a coconut whip cream cake that I made a few times for events at the Univ. It goes quick! A BBC would be good for drink with the cake. BBC=banana, bailey's, coconut rum.

John, sorry you dislike coconut. I can whip up another creation which is toasted almond brownies (I make in a cupcake pan) and topped with raspberry chocolate frosting piped on top, and a fresh raspberry & 2 sliced toasted almonds for garnish. That one took many, many tries to get just right. Mr. Mom had no problem eating the tests.
