Niki, are you using a Vista machine?
If it's not properly optimized and up to date, that could definitely be at the root of your problems.
(And that's assuming the rest of your system is up to spec.)

Since then I've made a point of using only web safe colors for highlightts and I haven't had a problem. (Although that doesn't explain pure white -- which is web safe, but still doesn't show up on a DVD menu. Hmmm.)
